Carrots are high in Vitamin A which improves vision, prevents cancer, anti-aging, prevents strokes, prevents heart disease, promotes healthy teeth and gums, and is used as an antiseptic (prevents infection). They are also a good source of Thiamin, Niacin, Vitamin B6, Folate and Manganese They have a very high content of Dietary Fiber, Vitamin A, Vitamin C, Vitamin K and Potassium.
Honey Glazed Carrots
1 pound baby carrots
2 tablespoons butter
2 tablespoons honey
1 tablespoon lemon juice
Freshly ground black pepper
1/4 cup chopped flat-leaf parsley
Directions: Bring water to boil in a medium sauce pan. Add salt and then carrots and cook until tender, around 5-6 minutes. Drain the carrots and add them back to the sauce pan with the butter, honey, and lemon juice. Cook until carrots are glazed, about 5 minutes. Season with salt, pepper, parsley and serve.
